So one of my favorite meals are these tacos. A dear friend of mine shared the original recipe, 10 years ago, that has been changed and adjusted over the past few years to please my family’s taste buds.
This recipe freezes great! I tend to double it every time I make it and then, freeze in single serve portions that I can make taco salad, breakfast tacos, or nachos with any time I want! Yep that’s how much I love it.
I use my cast iron dutch oven when I make this. First you are going to brown the beef with the onions and garlic in the olive oil until no longer pink.
Then you will add the rest of the ingredients and mix well.
Simmer to marry all those flavors together, after 30-45 minutes it is ready to enjoy! MMMMMM … so good! I hope you all enjoy it as much as we do! Here is a handy printable!
1 Tbsp Extra Virgin Olive Oil
1/2 Medium Onion, Chopped
1 1/2 Lbs. Ground Beef
2 Cloves Garlic, Minced
1 Jar (15 oz) Salsa
1 Pkg Taco Seasoning
2 Tbsp Brown Sugar
1 Can (4 oz) Diced Green Chilies
1 Cup frozen corn (or 1 can of corn; drained)
1 tsp Salt
1/4 tsp Pepper
1/4 tsp Ground Red Pepper
3/4 Cup Water
In a large pot brown onion, beef, and garlic in olive oil until no longer pink. Drain the fat.
Add the remainder of the ingredients; stir until well mixed.
Simmer on low for 30 covered and then uncovered 15 more minutes. Stir occasionally.
Serve with your favorite taco fixings. Some ideas: tortillas, sour cream, guacamole, shredded cheese, tomatoes, black beans, spanish rice.
