So we had another wonderful camping. We started off after school let out the other Friday and traveled for a while to get on the ferry. That was a first for me that I can remember. It took me a second of breathing when we got underway. I had everything important to me on a big boat, inside a truck. I had a weak moment of … what if!!
But we got to the island and set up camp. My parents set up their tent and we of course had the camper. It was a late dinner but enjoyable. We had onion bombs. Which turned out really well but we were so hungry I forgot to take a picture. It is definitely something we will make again – so I will post recipe I do then!
We had bacon, egg and cheese bagels for breakfast and start our day … early because when you have a little one everything starts early. Bike rides, walks, enjoying the views, golf cart rides, games, toys, sitting by the fire. I even got a few minutes to myself to knit!!! Great Saturday! Lunch was sandwiches or bagels. Dinner Grilled chicken. Of course S’mores. So good. We went back to traditional s’mores for this trip.
But I had to make sure I brought puppy chow on this camping adventure. My boys LOVE it! It is a snack or dessert at any time of the day … yes they even sneak some for breakfast.
Most recipes call for 9 cups. That is one cup less than a box. Annoying!!! So I do a full box and add extra of the other stuff. Works great! So a full box into a LARGE mixing bowl. On the stove top melt 5 TBSP butter, Heaping 1/2 Cup of Peanut butter plus a generous Cup of Chocolate chips.
Once melted remove from heat and add a teaspoon of vanilla. Pour over cereal and mix through.
Once the cereal is coated put into a large plastic bag (really big ziplock, or I have used the roasting bags or crockpot liners – whatever I happen to have on hand). Then add 1 1/2 cups powdered sugar. Then toss to coat. Once coated dump unto parchment or wax paper to set up. Then store in an airtight container in the refrigerator. To be honest here I added extra powdered sugar after I dumped it out to set up, just wasn’t coated well, but it normally only takes me 1 1/2 cups of powdered sugar.

1 Box Chex
5 TBSP Butter
1/2 Cup HEAPING Peanut Butter
1 Generous Cup Chocolate Chips
1 Tsp Vanilla
1 1/2 Cups Powdered Sugar
Empty box of Chex into a large Mixing Bowl. Set aside
On the stove top in a small pot, melt butter, peanut butter, and chocolate chips. Remove from heat and add vanilla. Mix through.
Pour mixture over cereal and stir to coat. Once coated dump into a large plastic bag that you can seal. Add powdered sugar, seal, then toss to coat.
Pour onto wax paper or parchment paper and allow to set. Once set store in an airtight container in the refrigerator.
