This is the time of year when we are reminded how wonderful it is to spend time with family and friends. It is always nice to spend time with them, but lives get busy and we sometimes forget and take it for granted. This week hubby and I had our dear friends over for dinner and movie night.
They may be past the little kid part, but they have older kids so they know what life is like with young children. They are kind enough to embrace it and come hang out at our place so we don’t have to pay a sitter or rush home. I made dinner, bubba made dessert … brownies, yum, and they brought the drinks, SCORE!
This time I had a dish called Crack Chicken. Served with a salad and rolls. Soooooooo yummy and easy. It’s a crockpot meal that can be frozen. If you are going to freeze it put everything into a freezer bag, except the cream cheese. Store for up to three months in freezer. Thaw over night, dump into crockpot and add the cream cheese at the end.
Crack Chicken is pretty simple made with chicken breasts, bacon, garlic, and cream cheese, just to name a few. Plus it is a crockpot meal so you can put it in and get other things done … like order holiday cards, if you are like me and JUST got those ordered.
Cook bacon. Put the chicken into the crockpot. Top with half of the bacon.
Then mix together the seasonings and pour over the top. My fresh parsley is from the garden, when it’s ready to pick I pick it then chop and freeze in a small amount of oil. That way I can always have “fresh” homegrown herbs. I also do this with basil, and chives. I would guess you can do it with others, I just haven’t tried it.
Cook on low for 4-6 hours. Remove chicken and shred. Then replace into the crockpot and add the cream cheese and cook for another 10 minutes until cream cheese is melted.
Now this amazing yumminess can be eaten as is. You can also serve it on a bun as a hot sandwich. I eat it with a side salad. But of course you still have that left over bacon and shredded cheese … you got it, top this chicken (however you are eating it) with those two things and it is a crowd pleaser. Enjoy!
2 pounds of boneless skinless chicken breasts
5 stripes of bacon (divided in half)
3 TBSP olive oil
2 TBSP white wine vinegar
1 TBSP onion powder
1 TBSP garlic powder
1 TBSP parsley
1/2 tsp salt
1/2 tsp pepper
8 ounces cream cheese
Shredded cheese to top
Cook bacon until crispy. Chop into pieces.
Put chicken breasts into crockpot. Top with bacon pieces.
Mix the olive oil, vinegar, onion powder, garlic powder, parsley, salt, and pepper. Pour over the chicken. Cook on low for 4-6 hours.
Remove chicken and shred. Put chicken back into crockpot with the cream cheese. Cook for an additional 10 minutes or until cream cheese melts and stirs into the chicken. Serve with topping of bacon and shredded cheese.
