So our neighbors quickly became our friends upon moving into their home. We just recently started to do a “family” dinner with them every other week or so. They have a sweet little girl whom my boys adore! We are so lucky.
This past week I made a Creamy Garlic Butter Chicken. I shredded the chicken and while it was out to shred I used my immersion blender and puréed the sauce smooth.
Now I am doing Keto and this made a great meal, everyone else… not so much, so I served the Creamy Garlic Butter Chicken over noodles like an Alfredo, YUM.
Now I had left overs because I always believe in having more than enough when serving others so people can eat as much as they want. I never want anyone to leave my house hungry. So I have been heating up the left overs and adding chopped pecans to it and some fresh green beans, or asparagus! YUM!
I served green beans, garlic butter bread, and an Oreo pie for dessert. This week I took help from my freezer for the garlic bread, green beans, and Oreo pie.
The best part about the Creamy Garlic Butter Chicken – cooks in the crock pot all day so it super simple! Now my pictures represent a recipe and a half. Here is what my bowl of Creamy Garlic Butter Chicken looked like.
So you start with chicken breasts, onion, garlic, salt, pepper and butter – can’t go wrong there now can you? Now I buy onions when they are on sale and chop then freeze them so this is about 1/2 of a large onion chopped and frozen but you can of course use fresh. The garlic is best cut in half to get the flavor out really well.
Then after that cooks all day you take the chicken out, shred it and puree the sauce while the chicken is out. Once the sauce is puréed, add the chicken back and the cream cheese, warm until melted. Serve and enjoy!
Creamy Butter Garlic Chicken
2 lbs Boneless, skinless chicken breasts
1 Stick Butter
8 Cloves Garlic, sliced in half
1 1/2 tsp Pink Salt
Pinch of Black Pepper
1/2 small Onion
8 oz Cream Cheese
Put the Chicken, Butter, Garlic, Onion, and salt in the crock pot and cook on low 6-8 hours.
Remove chicken and cream the sauce, I use an immersion blender. Once the chicken has cooled enough to touch shred the chicken, then add it back to the sauce.
Cut the cream cheese into chunks and add to the crock pot about 10 minutes before serving, so it melts and stir it in.
This is Keto friendly as is. But it is amazing over noodles for those who aren’t doing keto.
