My boys finally get it! They get my love for these quick cookies. I grew up eating these cookies. They are now called quick cookies or no bake cookies … but when I was growing up, we called them poop cookies! Yep you read that correctly Poop Cookies, because well that is what they look like, piles of poop.
You know I have been calling them poop cookies all along, so maybe that is why the boys had no interest in them. I started to call them no bake cookies because that is what they are called at the store, and the decided to try them.
WAIT, WHAT WAS I THINKING?!?!? Now I have to share them. OH yeah, I was thinking about my waistline and you know being a good example and sharing. Darn it!
So anyway, these cookies are super easy and are delicious! A couple things to remember use quick oats! If you use old fashion, they don’t turn out well. Use creamy peanut butter, not crunchy. Also use full fat because if you are having a cookie then have a cookie! But I guess that is just my personal preference.
So what you are going to do is lay a piece of parchment paper on the counter. On the stove top over medium heat melt and bring to a full boil, sugar, butter, milk, and cocoa. Then after 2 minutes of boiling add vanilla and peanut butter, stir until combined and melted. Stir in quick oats. Scoop onto parchment paper and allow to cool. ENJOY! Seriously that is it! Like I said SUPER EASY!!
A tip is to have the peanut butter, vanilla, and oats premeasured and ready to pour in because these cookies set up pretty fast.
Quick Chocolate Cookies
Ingredients:
1 3/4 Cup Sugar
4 Tbsp Cocoa
1/2 Cup Butter
1/2 Cup Milk
1 tsp Vanilla
1/2 Cup Peanut Butter
3 1/2 Cups Quick Oats
Lay a piece of parchment paper on the counter.
On the stove top over medium heat, stir sugar, cocoa, butter, and milk and bring to a full rolling boil. Boil for 2 minutes.
Turn off heat and add vanilla and peanut butter, stir until combined and melted. Stir in quick oats.
Scoop onto parchment paper and allow to cool.
