So it is winter here and I am always looking for warm comfort food. But most of the time I don’t just want comfort food, I want a recipe that is easy. If you have been reading my blog most of my recipes are super easy. I am a person with things to do and while I LOVE to be in the kitchen I don’t always have all the time in the world! You know I have kiddos and if it is going to take an hour just to prep – welllllllll the likelihood that it is actually going to happen is slim to none!
So this dish is actually a casserole – shhhhhh don’t tell my kids that. They assume that if the word casserole is in the title then it means it is gross. So to them it was a chicken and noodle dish.
So for this I used wide egg noodle. We buy them in a big economy bag … as if egg noodles weren’t cheap enough, but every penny counts right. So I start my noodles to boil in salted water, while I get everything else together.
While your egg noodles boil combine cream of chicken soup, milk, pepper, and parmesan cheese. Mix well. Then add diced cooked chicken. So for us that means a day or two before I make this we had a whole chicken and this is the meat leftover. You could also cook chicken breasts specifically for this or just buy a precooked chicken from the store, whatever floats your boat.
So mix in the diced cooked chicken. Then add 1 cup of FROZEN, yep you read that right you don’t have to thaw them just throw them in frozen, mixed veggies. Mix together.
Your egg noodles should be done by now so add the noodles to your chicken mixture. Now I scoop my noodles out of the water but if you are going to pour them into a colander then save a mug full of the cooking water incase you need it. If the mixture seems really thick add some of the cooking water to thin it out just a touch.
Now dump that whole mixture into an oven safe dish and bake. We sometimes top our with cheddar cheese or just leave it as is. YUM!
Hearty Chicken Casserole
Ingredients:
1 can cream of chicken
1/2 Cup milk
1/4 tsp pepper
1/4 Parmesan cheese
1 Cup frozen mixed veggies
2 cups cooked diced chicken
2 cups cooked egg noodles
1/2 Cup shredded cheese
Preheat the oven to 350°F.
Start the water to boil for the egg noodles. Cook egg noodles according to the directions on the package in salted water.
Combine cream of chicken soup, milk, pepper, and parmesan cheese. Mix well.
Add diced cooked chicken. Mix in the diced cooked chicken. Then add in frozen mixed veggies. Mix together.
Your egg noodles should be done by now so add the noodles to your chicken mixture. Save some cooking water incase it is needed. If the mixture seems really thick add some of the cooking water to thin it out just a touch.
Now dump that whole mixture into an oven safe dish and bake until warm and bubbly about 20-30 minutes.
