Creamy Italian Chicken and Pasta

So, in writing this blog today I have realized something… I have a lot of options for crockpot dinner ideas. I ALSO have a lot of different options of recipes I can make. Yet I always feel like I make the exact same thing over and over and over again. Why is that? Why do we seem to stick to the same old recipes? Why do we get into ruts?

I think it is because we don’t want to have to pull out the recipe box, or in my case binder. Maybe we don’t want to waste money on ingredients that we are not sure our family will like. Or we possibly have picky eaters who always want the same thing over and over again.

For me I think it is a combination of all of the above. But I am so happy I pulled the old recipe binder out and made this dish. You guys this dish is so good. So, this recipe came to me from a friend. BUT it was made with mushrooms – YUCK! I truly hate mushrooms. I don’t like the texture of them at all. It is rubbery and tough and GROSS!

Anyway, I ultimately change every recipe that has mushrooms in it. I mean I will do anything to NOT add any mushrooms at all to anything, including all forms of it such as cream of mushroom soup – again YUCK!

SO, I made a few changes and now it has become this dish that my family LOVES!

Plus, it is super easy and most of it is made in a crockpot. It does have a step first to get the sauce ingredients to melt and all come together. I am sure it would eventually all come together in the crockpot but in all honesty I have never tried it.


Creamy Italian Chicken Pasta

4 Boneless Skinless Chicken Breasts
½ Cup butter
1 Can Cream of Chicken Soup
4 oz. Onion and Chive Cream Cheese
1 pkg of Italian Seasoning
Scant 1/3 Cup White Wine Vinegar
Cooked Pasta

Put your chicken breasts into a crockpot.

On the Stove top heat until smooth butter, cream of chicken soup, cream cheese, Italian seasoning, and white wine vinegar. One all mixed together pour over the chicken in the crockpot and cook all day on low (6-8hours)

Cook pasta according to directions on package.

Shred the chicken into small pieces in the crockpot and stir together with the liquid. Serve over the noodles.
