Creamy Garlic Parmesan Chicken & Bacon

You guys this is an amazing dish. The WHOLE family LOVED it! And I cannot tell you how that makes me feel. When I put a dish down that of course our youngest was all up in arms saying “I wont like it! I Don’t want that for dinner” then just smiles. It is amazing.

Here is the recipe as we love it. I served it with peas the last time I made it and it was such a great combination that I thought about adding it right into the recipe, I didn’t because I know not everyone likes peas.

There are a few steps to this recipe. None of them are hard. Just takes some time. BUT trust me when I say that you really want to make this dish. It is so worth it.

So you preheat the oven to 400°F. Then using an oven safe pan, I of course am using my cast iron pan, cook the bacon pieces until crispy. Remove and drain on a paper towel.

Next in a medium size bowl mix together olive oil, 2 tsp of garlic, and parsley. Coat the chicken in the mixture. Transfer the pan to the oven and cook 15-20 minutes until chicken is cooked through. Once chicken is cooked remove from pan and set aside.

Add the final 2 tsp of garlic to the chicken juices in the pan over medium heat and cook for 2 minutes. Add in the cream and milk. Stir to get all the bits off the bottom on the pan.

Stir in the parmesan cheese and cooked bacon. Allow to simmer until slightly thickened and peas are warmed through. Add the chicken back to the pan and allow to simmer for 1-2 minutes in the cream to take on the flavor.

3 slices of Bacon, cut into pieces
1 pound Boneless Skinless Chicken Breasts
1 TBSP Olive Oil
4 tsp fresh Garlic, divided
1 TBSP Dried Parsley
½ Cup Heavy Cream
½ Cup Milk
½ Cup Grated Parmesan

Preheat the oven to 400°F

In skillet that can go in the oven cook the bacon pieces until crispy then remove from pan to cool.
