Chocolate Cake with Chocolate Cream Cheese Frosting

So, the other day it was rainy outside, and I just got the urge to bake. Now I live in a house where my boys like baked goods and each have their own wants.

So, since I wanted to get their opinions, I called my husband and asked what would you like me to bake … this is the conversation we had over the phone
“H: Angel Food Cake would be so good.
M: babe it is raining.
H:oh yeah um I don’t care”. So, I then walk into the other room and ask my boys. What does my youngest say … “Angel Food Cake” I mean seriously, like father like son.

Then my oldest says cookies, brownies, chocolate chip bread, chocolate chip cookies, no brownie cookies.

To which of course my youngest responds CAKE!!!

SO how do I choose between my kids … I call my husband and ask him cookies or cake? His response “OOO cookies sound good but cake sounds good too!” That right there was NO HELP at all. I mean come on; he didn’t even know that those were the boys choices. So, into the kitchen I went to bake chocolate cake with chocolate cream cheese frosting and brownie cookies.

So now I have some frosted cake in the fridge, frozen cupcakes, some sitting on my counter without frosting (by request), a container of brownie cookie,s and I gifted some cake to my parents.

This cake is easy and yummy and cooks up quickly. I would normally make this cake in a 9×13 pan and leave it in the pan. Since I wanted to freeze some, I made cupcakes and because I didn’t have enough cupcake tins I also made a small 8×8 thin cake too! The cupcakes I baked for 15-18 minutes. The pan took about 20-22 minutes.

Sift together the flour, cocoa, baking powder, salt, and baking soda, set aside.
Cream together eggs, brown sugar, and vanilla on medium speed for 3 minutes until it is light brown in color. Mix into the egg mixture the cup of mayo.
Mix hot water and coffee together in a pitcher.
Now you are going to alternate adding the dry ingredients and the hot liquid. You need to start and end with the dry ingredients. Mix until just combined.

Mix together frosting and spread on the cooled cake. This cake turns out soft and fluffy.

So to all those amazing guys in my life, Happiest of Father’s Day wishes, I’m so lucky to have you. Chocolate Cake with Chocolate Cream Cheese Frosting

2 Cups Flour
2/3 C Unsweetened Cocoa Powder
1 tsp Baking Soda
¼ tsp Salt
¼ tsp Baking Powder
3 Large Eggs
1 ½ Cup Brown Sugar, packed
2 tsp vanilla
1 Cup Mayo
2/3 Cup Hot Water
2/3 Cup Hot Coffee

Preheat the oven to 350°F. Spray a 9×13 baking dish with nonstick cooking spray.

Sift together the flour, cocoa, baking powder, salt, and baking soda; set aside.

Cream together eggs, brown sugar, and vanilla on medium speed for 3 minutes until it is light brown in color.

Mix into the egg mixture the cup of mayo.

Mix hot water and coffee together in a pitcher.

Now you are going to alternate adding the dry ingredients and the hot liquid. You need to start and end with the dry ingredients. Mix until the ingredients are just combined. Pour into the prepared baking dish. Bake for 35-45 minutes until a toothpick inserted into the center comes out clean. Allow to cool in the pan on a wire rack until fully cooled. Meanwhile make the frosting.

Ingredients:
8 ounces Cream Cheese, softened
½ Cup Salted Butter, softened
2 tsp Vanilla
½ Cup Cocoa Powder
5-6 TBSP Heavy Cream
20 ounces Powdered Sugar

Cream together cream cheese, butter, and vanilla. Mix in the cocoa powder. Add in the powdered sugar and Heavy Cream. Start by adding 6 TBSP heavy Cream and add more if needed.

Pour over cooled cake and spread evenly. Keep cake refrigerated.
