OK you guys I love super simple recipes. The title of this recipe is EASY Meatballs for a reason!! With the heat wave we have been having I don’t want hubby to stand over a grill, I also don’t want to stand at the stove and stir hot food for any length of time.
So, I made these meatballs and they were a hit. They have been in my recipe binder to ages and ages. I actually cannot even remember the last time I made them, which after this time of making them made me seriously wonder why I haven’t made them. We enjoyed these as meatball sandwiches, and I froze some for a later dinner. Double win!!
Preheat the oven to 350°F. Line a baking sheet with parchment paper. Mix all four ingredients until well combined. Use a scoop to get even sized meatballs. (35-40 meatballs). I roll them in my hand to make sure they are firmly together.
Place on prepared baking sheet and bake for 15 minutes turn and bake another 5-10 minutes or until cooked through.
Serving options: with your favorite spaghetti sauce, in my tomato basil cream sauce, in a brown gravy, or even cool and freeze for later use. I hope you guys enjoy these as much as my family did.
Easy Meatballs
Ingredients:
2 pounds Ground Beef
1 pkg Stove Top Stuffing
1 ¼ Cups Water
2 Eggs

Tomato Basil Cream Sauce – 1 jar favorite spaghetti sauce, 2 oz room temperature cream cheese, 2 TBSP fresh basil, chopped fine; combine in a large skillet and cook over medium heat until heated through. Add the meatballs and allow to cook for 3-4 minutes to combine flavors.
Brown Gravy – 1 jar beef gravy, ¼ cup sour cream, 2 TBSP fresh parsley; combine in a large skillet and cook over medium heat until heated through. Add the meatballs and allow to cook for 3-4 minutes to combine flavors.
