S’more Cookies

This past weekend was a wonderful and at the same time a hard weekend. For years now my sister and her family host my WHOLE family at their house on a lake. We go for a weekend, spend the weekend enjoying each other’s company, food, drinks, sun time, and water sports. Hubby drives the truck pulling the camper and between their house and the camper there are enough beds for all the adults with kids on the floor.

Well my beautiful sister is recently no longer with us. But her amazing husband and kids still had all of us up to the house. We had a wonderful time. It was beautiful weather with a nice breeze, so it wasn’t too hot. The kids never stopped playing, not even long enough for us to get a standing still picture of all nine of them together. I am very sure my sister was watching all of us together with a huge smile on her face.

Every year we bring appetizers, snacks, drinks, and sides for the meals. Divided up of course so it is not too much food – – – that is a joke we ALL bring more than we say and there is always WAY TOO MUCH FOOD! My brother-in-law mans the grill and I swear he is the grill master.

Anyway, this year I took my normal food but I also brought an extra little treat. These s’more cookies. They are amazing. They are easy. They were gone quick!!! Next year I think I will double the recipe and only take half in the first day and half in the second day, so we have some on both days.

These are gluten free and come together very quickly. Cream together first four ingredients. Using a cookie scoop out 18 cookies. Press the tops of the cookies with a fork with the crisscross pattern. Bake 8-10 minutes.

Cut marshmallows in half. Put half on each cookie while they are still hot. Put the cookies back in the oven under a high broil for 1-2 minutes until golden brown. Make sure to watch them because it can go to far very quickly.

Pull out of the oven and place an unwrapped Hershey kiss on top of each toasted marshmallows. Allow to cool and the chocolate to harden before  you try to store them stacked.

  • Servings: 18 cookies

1 Cup Sugar
1 Cup Peanut butter
1 Egg
1 tsp Vanilla
9 Large Marshmallows
18 Hershey kisses

Preheat the oven to 350°F

Cream together first four ingredients. Using a cookie scoop so that the cookies are even in size scoop out 18 cookies.

Press the tops of the cookies with a fork with the crisscross pattern.

Bake 8-10 minutes.
