Zucchini Chocolate Chocolate Chip Muffins

I have been playing around with some recipes lately. Trying to make one thing from another. It has been fun but also hard because well I am very hard on myself and really don’t like to waste food to a dud recipe.

Well our zucchini crop is doing what it does best, give a bumper crop. So like I do every year I puree it and portion it out in  measurements for chocolate chip bread. The boys love it and ask for it often and I make it in the winter for a special treat.

Now I have been craving a chocolate chocolate chip muffin like I used to get at school. They are individually wrapped and soft and big and chocolatey. But seeing as I am now an adult and know better than to consume half of my days calories in one muffin I wanted to see what I could do to recreate the yumminess.

So I took my chocolate chip bread and added chocolate and switched up some ingredients and while they are not quite the same they are pretty darn good.

Sift together dry ingredients (Flour, Cocoa powder, baking soda, baking powder, and salt). Set aside.

Mix together zucchini, egg, oil, and sugar.

Add dry ingredients to the wet, mix until combined. Stir in the chocolate chips. Scoop into greased muffin tins. Makes 15-18 muffins.

Bake for 18-23 minutes, or until a toothpick inserted into the center of one come out clean.

1 ½ Cups pureed zucchini
1 Egg
¼ Cup Oil
1 ¼ Cup Sugar
1 ½ Cups Flour
½ Cup Cocoa Powder
½ tsp Baking Soda
½ tsp Baking Powder
½ tsp Salt
1 Heaping Cup Chocolate Chips

Preheat the oven to 350°F. Grease muffin tins. Sift together dry ingredients (Flour, Cocoa powder, baking soda, baking powder, and salt). Set aside.

Mix together zucchini, egg, oil, and sugar.

Add dry ingredients to the wet, mix until combined. Stir in the chocolate chips. Scoop into prepared muffin tins. Makes 15-18 muffins.
