Lemon Garlic Chicken with New Potatoes and Green Beans

You see that title right … do you know what that means??? 1 dish for cooking. 1 bowl for mixing the “flavor liquid”. Yeah that sounds gross, but I really don’t know how else to say it. 2 dishes dirty and a whole meal made! Perfect right!!!

We made the decision to have our boys attend virtual school at least for the first semester of school. But with this new way of doing school there is a serious learning curve. SO, I am looking for any and all ways to make my life a little easier. This is a dish we love, and I finally have it figured out to perfect for us.

Preheat the oven to 400°F. Spray a casserole dish with nonstick spray for easier clean up.

In a bowl mix olive oil, lemon juice, minced garlic, salt, and black pepper. Toss about a cup of new potatoes whole in mixture. Then using a slotted spoon scoop, them out and put them in the casserole dish around the edges. Next pour the green beans into the middle of the casserole dish. I used frozen in these pictures, but I have also used fresh. The frozen beans got a little mushier (is that a word?) but were still good.

Toss chicken in the flavor mixture and then lay on top of green beans. Pour any extra flavor liquid over the whole dish. Put into the oven and roast for 50 minutes or until the chicken is cooked through.

ENJOY, I mean seriously it is that easy. It is meat, veggies, and starch all made in one dish at one time.

Ingredients:

6 TBSP Olive Oil

3 TBSP Lemon Juice

1 TBSP Minced Garlic

1 tsp Salt

¼ tsp Pepper

12 oz New Potatoes

1 pound Green Beans

4 Chicken Breasts

and black pepper. Toss a heaping cup of new potatoes whole in mixture. Then
using a slotted spoon scoop them out and put them in the casserole dish around
the edges.

Pour the green beans into the middle of the casserole dish.

Toss chicken in the flavor mixture and then lay on top of
green beans. Pour any extra flavor liquid over the whole dish.

Roast in the preheated oven for 50 minutes or until the
chicken is cooked through.
