Crockpot Steak Fajitas

School from home, virtual that is, is underway. There have been a few bumps in the road. There have also been wonderful opportunities afforded to us because we choose to keep the boys’ home for now.

My mom and my mother-in-law have taken time to come and hang out, teach, and play with the boys. They have each have had their own separate time with the boys more than just a quick visit over the weekend. My parents have also taken them on a field trip to the local fort for a history lesson.

We were blessed to be able to travel with my parents to visit my brother and new sister-in-law as well as seeing my hubby’s sister and brother-in-law. We are extremely grateful for the time with family especially in this year of trial. The boys had wonderful learning experiences along our travel as well as while we were there … plus some pool time and adventure time in warm weather when the weather at home has turned cooler.

So, before we left, I was struggling with getting everything ready. I was very anxious, but thankfully I was over prepared and no major hiccups. Before we left, I was doing everything I could to keep life easy whenever and wherever possible. ENTER Crockpot Steak Fajitas … simple and yummy! We will make these again, anytime and the leftovers were amazing too!!! If you prefer you can also make this with chicken, also a very yummy outcome.

Start by slicing a large onion and pour into the bottom of the crockpot. Cut a Flank steak into strips. I cut mine when it is still slightly frozen because it is so much easier. Put into the crockpot. Then cover with a mixture of Salsa, lemon juice, minced garlic, and taco seasoning. Cook on low 5-6 hours. Add bell peppers and cook on low one more hour. I use frozen sliced bell peppers. If you use fresh bell peppers you may want to cook a little longer than one hour depending on  how soft you like them.

Serve with flour tortilla and usual toppings, then ENJOY!!

Crockpot Steak Fajitas

Ingredients:

1 Onion, sliced

1 Pound Flank Steak, sliced

½ Cup Medium Salsa

2 TBSP Lemon Juice

1 TBSP Minced Garlic

2 TBSP Taco Seasoning

Slicing a large onion and pour into the bottom of the crockpot.

 

Cut a Flank steak into strips then put into the crockpot.

 

Mix together salsa, lemon juice, minced garlic, and taco seasoning.

 

Cook on low 5-6 hours.

 

Add bell peppers can cook on low one more hour.

 

Serve with flour tortillas, shredded cheese, salsa, and sour cream.
