Soft Pumpkin Cookies with Brown Sugar Frosting

It is Autumn. All things pumpkin are fair game. Now I am not a pumpkin spice coffee kind of girl, but I love baking with pumpkin. These cookies are soft and taste amazing. The cookie by itself is not overly sweet, the frosting is what puts these cookies over the top.

My dear friend gave us some Halloween sprinkles when we came back from traveling and my youngest wanted to put these to use right away. So, we did! He is currently searching my recipe binders and books for other things we can use them on. Look like I am going to need to find people to gift with baked goods, or i will be 700 pounds quickly.

NOW, this recipe uses only ¾ cup of pumpkin. So only half a can. We are currently working on putting some weight on my pup, so we add a little pumpkin to his food…he LOVES it! Anyway, I wanted to use some for the recipe. You can easily double this recipe and use a whole can.

In a large bowl beat butter. Add sugar, baking powder, baking soda, salt, and cinnamon. Beat until well combined. Beat in egg and vanilla. Add pumpkin until well combined. Mix in the flour until combined.

Using a medium cookie scoop 2 inches apart on a parchment lined baking sheet. I scooped half the cookies. Then I added ½ cup of semi-sweet chocolate chips and mix in.

For frosting in a small saucepan and heat butter and brown sugar until melted and smooth. Stir in milk and vanilla. Beat in the powdered sugar until smooth.  Spread on cookies and if desired sprinkle with decorative sugars or sprinkles.

Ingredients:
1 Cup butter, softened
1 Cup Sugar
1 tsp Baking Powder
1 tsp Baking Soda
½ tsp Salt
1 tsp Ground Cinnamon
1 Egg
1 tsp Vanilla
½ Can Pure Pumpkin, (8 oz)
2 Cups Flour

Frosting:
¼ Cup Butter
¼ Cup Brown Sugar, packed
1/8 Cup Milk
1 tsp Vanilla
2-3 Cups Powdered Sugar

Preheat the oven to 350°F. In a large bowl beat butter for 30 seconds.

Add sugar, baking powder, baking soda, salt, and cinnamon. Beat until well combined.

Beat in egg and vanilla.

Add pumpkin until well combined.

Mix in the flour until combined.

Using a medium cookie scoop 2 inches apart on a parchment lined baking sheet.

Bake for 10-12 minutes or until tops are set.

Transfer to a wire cooling rack to cool.

For frosting in a small saucepan and heat butter and brown sugar until melted and smooth.

Stir in milk and vanilla. Beat in the powdered sugar until smooth.

Spread on cookies and if desired sprinkle with decorative sugars or sprinkles.
