I needed to focus on myself and my family in that first holiday season after losing someone so special to me. This is the start of a new year and we are in a new season of life. One of the ways I show love is through food. Cooking things I know my family loves. So here is a wonderful creamy chicken recipe. I serve it with rice and a veggie. I make it from frozen chicken breasts because I almost always forget to defrost. It can be made from fresh chicken breasts just lessen the time and cook until done.
This is a simple recipe at goes fast in my family. I have one boy in his teens and one who is in elementary school. They seem to be eating me out of house and home lately and I know this is a pleaser, so I always make it with 2 pounds or more of chicken breasts. You can add chicken, just add more of each sauce ingredient in proportion.
Preheat the oven to 400°F. Spray a 9×13 baking dish with cooking spray. Place frozen chicken breasts in the pan. Mix together the rest of the ingredients and pour over the chicken. Cover pan with foil and bake 25-35 minutes covered. Then uncover and cook another 10-20 minutes or until cooked through.
That is, it. This recipe is really that easy. Just be warned it seems to fly out of the pan.
Ranch Chicken
Ingredients:
2-pounds Boneless Skinless Chicken Breasts
4 TBSP Butter, melted
¼ Cup Water
½ Cup Ranch
½ tsp Garlic Powder
½ tsp Basil
½ tsp Parsley
Preheat the oven to 400°F.
Spray a 9×13 baking dish with cooking spray. Place frozen chicken breasts in the pan.
Mix together the rest of the ingredients and pour over the chicken.
Cover pan with foil and bake 25-35 minutes covered. Then uncover and cook another 10-20 minutes or until cooked through.
